Penne with leeks and smoked salmon sauce.
An example of an excellent Canadian-Italian marriage!
3.5 oz | penne rigate | 1 1/4 cup
2 slices | smoked salmon, chopped | 1 oz
1 | leeks, thinly sliced crosswise | 11 oz
1 tbsp | butter, unsalted | 0.5 oz
1 1/2 tbsp | whipping cream 35% | 0.8 fl.oz
1 pinch | salt [optional]
ground pepper to taste [optional] |
Keep the serving dishes in the oven at the lowest setting so they are warm when you serve.
Put a colander in the sink to drain the cooked pasta so that it will be ready when needed.
Parmesan is not added since the flavour of fish sauces in general does not benefit from the addition of cheese.
