Ingredients

5 stalks rhubarb, chopped 1.2 lb
3 cups strawberries, in pieces 1 lb
3/4 cup sucanat 5.3 oz
1/3 cup tapioca flour/starch 1.8 oz
1/2 cup unsweetened coconut flakes 1.8 oz
2 egg whites 4 tbsp
1/4 tsp salt
1 tsp vanilla extract 0.2 fl.oz

Before you start

A hand-held or stand mixer will make things easier for this recipe.

Method

  1. Preheat the oven to 350°F/180°C.
  2. Put the rhubarb and strawberry pieces in a bowl. Add 1/2 cup (100 g) of sugar and 1/4 cup (35 g) of tapioca flour, then toss to combine. Transfer the mixture to a 9×9 inch (23×23 cm) pan.
    1. In a second bowl mix the coconut and remaining flour.
    2. Using a mixer, beat the egg whites with the salt until soft peaks are formed. Slowly add the remaining sugar until stiff peaks are formed. Stir in the vanilla and the coconut mixture. Combine gently using a spatula.
    3. Drop large spoonfuls of the filling onto the fruits.
    4. Place in the middle of the oven and bake for 40 min or until the top is golden and the filling starts to bubble. Chill before serving.
