Ingredients

1 tbsp fresh mint, finely chopped 3 g
1 tsp peppercorns, crushed 3 g
1 1/2 tbsp olive oil 23 mL
3 tbsp red wine 45 mL
1 tsp sugar 4 g
1 pinch salt [optional] 0.2 g
2 lamb loin chops 320 g

Before you start

The steaks must be marinated overnight. They can be cooked using either a broiler in the oven or an outdoor grill.

Keep the serving plates warm on the stove while you're preparing the dish.

Method

  1. Finely chop the mint leaves, then put them in a bowl. Crush the peppercorns, then add them to the bowl. Pour in the olive oil, red wine and sugar, then mix well : the marinade should have a thick consistency. Add the lamb chops, toss well, then cover with plastic wrap or a dish. Place the bowl in the refrigerator to marinate overnight.
  2. Cook the chops on a medium grill or under the broiler for about 10 min, basting occasionally with the marinade and turning them once. Season with salt then serve on the warmed dishes.
