Ingredients

7.1 oz unsweetened (dark) chocolate
1 tbsp margarine non-hydrogenated 0.5 oz
6 eggs size large
1/4 tsp salt
1/2 oranges, zest 3.2 oz

Method

  1. Melt the chocolate with margarine over very low heat.
  2. Separate the egg whites from the egg yolks. Beat the egg whites with salt into stiff peaks. Keep aside.
  3. Slowly add the melted chocolate and orange zest to the egg yolks with a whisk.
  4. Add one the third of the egg whites and gently stir. Add the remainder of the egg whites and mix well.
  5. Chill in the refrigerator for 3 hours before serving.
